1 pound Odom's Tennessee Pride® Mild Country Sausage

1 medium yellow onion, chopped (about 1-1/2 cups)

2 cloves garlic, chopped

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon paprika or smoked paprika

1 teaspoon dried oregano

1/2 teaspoon kosher salt

1/2 teaspoon ground black pepper

2 cans (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained

2 cups lower sodium beef broth

1 can (15 oz each) pinto beans, drained, rinsed

1 can (15 oz each) black beans, drained, rinsed

1 can (8 oz each) Hunt's® Tomato Sauce

cheese, sour cream & green onions, optional

Directions

Step one
Heat a large Dutch oven over medium heat. Add sausage and onion to pan and cook until browned, about 5 minutes, stirring to break up the pieces. Stir in garlic, chili powder, cumin, paprika, oregano, salt, and pepper and cook until fragrant, about 2 minutes.

Step two
Pour in undrained tomatoes, beef broth, beans, and tomato sauce. Bring to a boil. Reduce heat to medium-low and simmer uncovered for about 30 minutes to let the flavors develop.
