Stir cookie mix, butter, and egg together in a large bowl until well blended. *If your dough seems a little dry, add water 1 teaspoon at a time until dough is smooth. Place a large sheet of plastic wrap on counter. Place dough on plastic wrap and knead gently until dough is smooth. Pat dough into a flat disc. Wrap disc tightly with plastic wrap and refrigerate at least 45 minutes.
Preheat oven to 350°F. Spray large baking sheet with cooking spray.
Lightly flour your work surface and rolling pin. Roll dough out to 1/4-inch thick. Use a bench scraper or knife to cut dough into triangles. You can make them all the same or vary them in different heights and widths.
Place on baking sheet. Bake 10 to 12 minutes, until lightly browned on the edges. Working quickly and carefully, insert a pretzel stick in the bottom of each tree. Remove cookies to wire rack to cool completely.
Frost cooled cookies with frosting and decorate with sprinkles. Enjoy!
