Spicy Tomato Hummus recipe

My husband and I just bought our first home. We were so excited to invite all of our friends over for a housewarming party and of course we had to have snacks! I always have plenty of RO*TEL® in the cupboard, so queso was an option … but for this occasion, we decided to go with something a little different.

So we opted for Spicy Tomato Hummus instead. It’s made with prepared hummus, RO*TEL Original Diced Tomatoes & Green Chilies, lemon juice and seasonings.

It couldn’t be easier to make! 

Just drain the RO*TEL, pulse it in the food processor a few times, and stir it into the hummus with the seasonings.

Don’t forget to save some chopped tomatoes for garnish on the top so all of your guests know what’s mixed in! I also toasted a few cumin seeds in a sauté pan until they were fragrant, then scattered them over the top of the tomato hummus dish for an earthier flavor. I served my hummus with the traditional salted pita chips and, for a healthier option, some multi-colored bell pepper strips would be a great addition, too. Yum!

Our friends loved the hummus and I loved how easy this spicy tomato hummus recipe was to make and serve. This recipe will definitely be one of our go-to’s for parties or to just keep in the fridge for a healthier snack throughout the week. I will always love simple recipes that are perfect for nearly any occasion!
