Zesty Bean Dip

A simple creamy bean dip made with refried beans and Ro*Tel Hot Tomatoes, then topped with cheese and bacon

INGREDIENTS

  • 5 slices fully cooked bacon
  • 1 can (16 oz each) Rosarita® Traditional Refried Beans
  • 1 can (10 oz each) Ro*Tel® Hot Diced Tomatoes with Habaneros, drained
  • 4 ounces cream cheese
  • 1/2 cup shredded mild Cheddar cheese

DIRECTIONS

  1. Heat large skillet over medium heat. Add bacon; heat 5 to 7 minutes or until crisp. Drain bacon on paper towels and crumble; set aside.
  2. Add beans, drained tomatoes and cream cheese to skillet; heat 5 minutes or until cream cheese melts, stirring occasionally.
  3. Pour bean mixture into 9-inch glass pie plate or other shallow dish. Top with shredded cheese and crumbled bacon. Serve warm.

For some reason this did not taste right. The beans came out perfect but when I added the rotel it went down hill. I had to dump it out and start again.
