Tex-Mex Meatballs and Rice

Baked meatballs served with a chunky tomato sauce with green chilies and rice

INGREDIENTS

  • PAM® Original No-Stick Cooking Spray
  • 1 pound lean ground beef (93% lean)
  • 1/4 cup dry seasoned bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup Egg Beaters® Original
  • 2 cans (8 oz each) Ro*Tel® Mild Tomato & Green Chili Sauce
  • 1 can (10 oz each) Ro*Tel® Mild Diced Tomatoes & Green Chilies, drained
  • 3 cups hot cooked brown rice

DIRECTIONS

  1. Preheat oven to 400°F. Spray 13x9-inch glass baking dish with cooking spray; set aside.
  2. Combine beef, bread crumbs, Parmesan cheese and Egg Beaters in large bowl. Divide meat mixture evenly into 18 portions; roll gently and place in baking dish. Bake 15 minutes or until meatballs are cooked through (160°F).
  3. Combine tomato sauce and drained tomatoes in microwave-safe bowl; cover. Microwave on HIGH 2 minutes; keep warm. Just before serving, stir 1 cup sauce mixture into cooked rice. Serve meatballs and remaining sauce over rice.

COOK'S TIPS

  1. Sprinkle with shredded cheese, if desired. Try this recipe with Ro*Tel® Original Tomato & Green Chili Sauce in place of the mild version for more flavor. One fresh egg may be used in place of 1/4 cup Egg Beaters.

The recipe for the sauce is extremely bland. Next time I would try spaghetti sauce instead of the 2 cans of tomato sauce and 1 can of diced tomato, maybe it would improve the taste (?). That being said, this is a very good recipe for meatball. The meatball was juicy and moist. I made slightly bigger meatball (only made 12 meatballs instead of the 18) and baked them 20 minutes instead of 15, and they were all juicy and tasty. All in all, I would make it again, but may find a different recipes for the sauce.
