I have used this recipe several times and each time it is a hit! As others have said, it is great in a wrap. I put it in flour tortillas, add meat and refried beans. I then wrap it burrito style, deep fry it, and top it with enchilada sauce and sour cream. YUMMY!!!

This is ver yummy as written. I change it up by frying the corn till its blackened , black beans, ro-tel then I mix a little chipotle in adobo with sour cream, mayo

There are a lot of black bean/corn salsa recipes out there, and this is by far the best. I always triple/quadruple the recipe, and increase the corn ratio a bit while decreasing the Ro-tel ratio (sorry - we do love Rotel but for this recipe less is more.) We eat it straight, scoop it up with chips, and bestbestbest is in a monterey jack flour tortilla quesadilla pan fried w a bit of butter. Heaven!

This recipe is easy and delicious. They whole family liked it. It's a great side for chicken, beef or fish.
