INGREDIENTS
- PAM® Original No-Stick Cooking Spray
- 6 eggs
- 1 cup reduced fat (2%) milk
- 1 can (15 oz each) Ranch Style® Beans, drained
- 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained well
- 1 pkg (7 oz each) frozen Banquet® Brown 'N Serve™ Original Sausage links, chopped
- 1 cup frozen whole kernel corn
- 1/2 cup shredded Pepper Jack cheese
- 4 taco shells, broken into bite-size pieces (4 shells = 1 cup)
- Sour cream, optional
DIRECTIONS
- Preheat oven to 350°F. Spray 8x8-inch glass baking dish with cooking spray. Whisk together eggs and milk until blended in large bowl.
- Add beans, drained tomatoes, sausage, corn, cheese and taco shell pieces; stir to combine. Pour into prepared dish.
- Bake 55 to 60 minutes or until casserole is golden brown and middle is set. Remove from oven; cool slightly. Serve with sour cream, if desired.
