1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained, divided
1 can (16 oz each) Rosarita® Traditional Refried Beans
2 cups guacamole
1 cup shredded Cheddar cheese (1 cup = 4 oz)
1/4 cup sliced green onions
1/2 cup sour cream
1/4 cup sliced ripe olives
Tortilla chips, optional

Reserve 1/2 cup of the drained tomatoes; set aside. Combine the remaining drained tomatoes and beans in medium bowl; mix well. Spoon bean mixture evenly into eight (4-ounce) martini glasses.
Divide the guacamole, cheese, reserved tomatoes, onions, sour cream and olives equally in layers over the beans between glasses.
Insert 1 tortilla chip in dip of each glass for garnish. Serve with additional tortilla chips, if desired.
Margarita glasses (8 to 9 ounces) may be used if one would like double-size appetizer portions or appetizers to share.
