- 3 ripe avocados, pitted, peeled, mashed
- 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
- 1/2 cup chopped onion
- 1 tablespoon lime juice
- 1/2 teaspoon salt
- Ground black pepper
- Tortilla chips, optional
- Mix avocados, drained tomatoes, onion, lime juice and salt in medium bowl until blended. Season with pepper to taste.
- Serve with tortilla chips, if desired.
I never would try quacamole until i saw this recipe at my grocery store. i love ro-tel tomatoes so i thot it would be something to try on weekends during football games...i LOVED it!! its simple and so flavorful and ive been making it ever since the first try and that's been over 6months ago!!! please try it u will find a new snack and a favorite one too!!!
This review is for the Guac recipe. Horrible. I love avocado. I love onions and lime and guac... but this recipe turned out awful. I am so mad that I have to throw the whole thing out. It is inedible. DO NOT USE 1/2 cup chopped onions.. or maybe I should say, put a tablespoon at a time in ... I used plain yellow onions and the whole thing tastes like I am eating a raw onion. And this review is from an onion lover!
Made this recipe for the first time tonight and it barely lasted 30 minutes before my roommates and I had eaten it all! Delicious and quick!

I love all things avocados so I had to try this recipe. It was awesome!!! I love fresh guacamole. I used the Rotel with lime juice. I plan to make it next with the hot Rotel since I love Spicy stuff!!!
This is my go-to recipe for guacamole. I've made it enough that I only eyeball the measurements, but it is always good. I don't usually have limes so have used lemon juice or Nelly and Joe's Key Lime juice as subs and it always comes out delicious.
