Easy guacamole recipe 'rocks' with zesty Ro*Tel tomatoes, onion and lime juice added to creamy mashed avocados


  • 3 ripe avocados, pitted, peeled, mashed
  • 1 can (10 oz each) Ro*TelĀ® Original Diced Tomatoes & Green Chilies, drained
  • 1/2 cup chopped onion
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • Ground black pepper
  • Tortilla chips, optional


  1. Mix avocados, drained tomatoes, onion, lime juice and salt in medium bowl until blended. Season with pepper to taste.
  2. Serve with tortilla chips, if desired.

I love all things avocados so I had to try this recipe. It was awesome!!! I love fresh guacamole. I used the Rotel with lime juice. I plan to make it next with the hot Rotel since I love Spicy stuff!!!

This is my go-to recipe for guacamole. I've made it enough that I only eyeball the measurements, but it is always good. I don't usually have limes so have used lemon juice or Nelly and Joe's Key Lime juice as subs and it always comes out delicious.

I have been making guacamole similar to this for years and it is always a big hit. I don't like the lime juice and I add garlic and a little juice from the Ro*tel

Made this last week and making again today. Sooooo good. Forgot to buy limes again, but I used lime juice in bottle. I also add fresh cilantro. Try it! You'll love it! :)

I made this today ad it is absolutely delicious, instead of "original" Ro-tel, I used the "Mexican" Ro-tel, because of the cilantro element. I HIGHLY suggest this! I also didn't have any limes on hand, so I used pre-made lime juice (in the plastic lime shaped container)!
