A creamy, cheesy and spicy dip made with just 2 ingredients--a Ro*Tel signature recipe. Velveeta® is a registered trademark of Kraft Foods, Inc.


  • 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
  • 1 pkg (16 oz each) Velveeta®, cut into 1/2-inch cubes


  1. Combine undrained tomatoes and Velveeta in medium saucepan.
  2. Cook over medium heat 5 minutes or until Velveeta is melted completely and mixture is blended, stirring frequently.
  3. Serve warm as a dip with tortilla chips, crackers or cut-up fresh vegetables.


  1. To make in microwave, combine undrained tomatoes and Velveeta in 1-1/2-quart microwave-safe dish; cover. Microwave on HIGH 5 minutes or just until Velveeta melts, stirring after 3 minutes. Remove from microwave; stir until mixture is blended. CAUTION: Dish will be hot; use hot pads. For a double recipe, microwave on HIGH 8 minutes or until Velveeta melts, stirring after 5 minutes. Drain 1 can of tomatoes if a thicker dip is preferred.

The original recipe has always been a favorite, but if it is too thick, I add skim milk. It makes it perfectly smooth and keeps it that way. Sometimes I add a little cumin, chili powder, and dry mustard just for a twist.

Cheese Wiz instead of the Velveta. So much better. Next time I want to try and ad taco beef.

This dip has been around for years but it can be jazzed up. Combine any favorite breakfast sausage, ground beef browned with a little taco seasoning and cayenne pepper. If you like more heat add any of your favorite finely chopped hot peppers. If Velveeta isn't your cheese of choice use a white cheddar and heavy cream mixture. About 1/3 cup hvy cream to 16oz of white cheddar. Be sure and melt the cheese then combine tomatoes and hamburger mixture.

i love making rotel but i usually brown some ground beef add taco packets with a lil water then cut up the velvetta cheese and add the rotel it stay moist and creamy that way

Rotel Dip is always a favorite at the Sunday football party. I add a bit of heavy whipping cream, tapatio sauce, cup of corn,and chorizo sausage. Throw in a slow cooker with white queso Velveeta and you have a winner.

The Rotel tomatoes are good but the Velveeta makes the dip almost inedible - absolutely terrible stuff.
