To make in microwave, combine undrained tomatoes and Velveeta in 1-1/2-quart microwave-safe dish; cover. Microwave on HIGH 5 minutes or just until Velveeta melts, stirring after 3 minutes. Remove from microwave; stir until mixture is blended. CAUTION: Dish will be hot; use hot pads. For a double recipe, microwave on HIGH 8 minutes or until Velveeta melts, stirring after 5 minutes. Drain 1 can of tomatoes if a thicker dip is preferred.

My mother brought a case of Rotel from Texas back in the 60's we had rotel dip every year for new years eve till the case ran out. With in a couple of years of running out we found Rotel in a store in IL. Didn't have to do without it for long

I love this dip! It's also great as a sauce over roasted or steamed veggies. I don't like large chunks of Ro-Tel in my dip, so I whizz it undrained slightly in a blender before adding it to the Velveeta -- delicious!

I always add in a can of drained black beans. Makes it even better for a vegetarian version

My family has made this for years only we brown Jimmy Dean breakfast sausage and add it in. It's a good dip without the sausage and better with it.
