Tasty bean and cheese quesadillas grilled to a golden brown and served with quick-to-fix chunky tomato salsa

INGREDIENTS

  • 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
  • 1/4 cup chopped fresh cilantro
  • 1 can (16 oz each) Rosarita® Traditional Refried Beans
  • 4 burrito-size flour tortillas (10 inch)
  • 1 cup shredded Cheddar and Monterey Jack cheese blend (1 cup = 4 oz)
  • PAM® Original No-Stick Cooking Spray

DIRECTIONS

  1. Combine drained tomatoes and cilantro in small bowl for salsa; set aside.
  2. Spread 1/4 of the beans on half of each tortilla. Sprinkle 1/4 cup cheese over beans. Fold each tortilla in half to cover beans and cheese.
  3. Lightly spray tortillas with cooking spray. Heat 2 quesadillas in large skillet over medium-high heat until lightly browned and cheese melts, turning once. Repeat with remaining 2 quesadillas. Cut each quesadilla into 3 wedges. Serve with salsa.
