
INGREDIENTS
- 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
- 1/4 cup chopped fresh cilantro
- 1 can (16 oz each) Rosarita® Traditional Refried Beans
- 4 burrito-size flour tortillas (10 inch)
- 1 cup shredded Cheddar and Monterey Jack cheese blend (1 cup = 4 oz)
- PAM® Original No-Stick Cooking Spray
DIRECTIONS
- Combine drained tomatoes and cilantro in small bowl for salsa; set aside.
- Spread 1/4 of the beans on half of each tortilla. Sprinkle 1/4 cup cheese over beans. Fold each tortilla in half to cover beans and cheese.
- Lightly spray tortillas with cooking spray. Heat 2 quesadillas in large skillet over medium-high heat until lightly browned and cheese melts, turning once. Repeat with remaining 2 quesadillas. Cut each quesadilla into 3 wedges. Serve with salsa.
