1/4 cup Earth Balance® Soy Free Buttery Spread
1 red onion, thinly sliced
4 cloves garlic, minced
5 large zucchini, spiralized
1 cup cherry tomatoes, halved
1/2 cup sliced fresh basil leaves
1/2 teaspoon crushed red pepper flakes (optional)

Melt Earth Balance in a large pot over medium-low heat. Add the onion and garlic and cook for 3 minutes, until fragrant.
Add the zucchini noodles to the pot and season them with salt & pepper. Cover the pot with a lid and cook for 2 minutes, stirring halfway through.
Add tomatoes to the pot and continue to cook for another 3 to 4 minutes, stirring frequently. You can taste test a piece of zucchini noodle at this point to see if it’s soft enough for your liking. If not, continue to cook for another couple of minutes.
Add the fresh basil, crushed red pepper (if using) to the pot then stir together.
