Mexican Pizza

Pita breads make a perfect crust for individual pizzas topped with refried beans and melted cheese, sprinkled with crisp lettuce and zesty tomatoes

INGREDIENTS

  • 1 can (10 oz each) Ro*Tel® Mexican Diced Tomatoes with Lime Juice & Cilantro, drained, divided
  • 1 can (16 oz each) Rosarita® No Fat Traditional Refried Beans
  • 6 honey wheat pita pocket breads (6-1/2 inch)
  • 3/4 cup shredded Mexican cheese blend
  • 4-1/2 cups thinly shredded romaine lettuce
  • 6 tablespoons finely chopped red onion

DIRECTIONS

  1. Preheat oven to 450°F. Place 1/4 cup drained tomatoes in small bowl; set aside. Mix remaining tomatoes and beans in small bowl until combined. Spread evenly onto pita breads.
  2. Sprinkle pizzas evenly with cheese. Place on ungreased baking sheets; bake 8 to 10 minutes or until edges of breads are lightly browned and cheese melts, rotating pans halfway through.
  3. Top with lettuce, onion and reserved tomatoes.

Have been making these for a couple of months now, and my husband and myself absolutely love it! It's full of flavor, and very filling!

This was awesome. I made it a little more fattening - added guacamole and sour cream and Trader Joes Corn Salsa - but awesome and easy!

Would be nice if you included nutritonal value, particularly fat ( saturated & trans ); sodium & cholesterol and of course calories

This turned out better than I expected. I cut the recipe back since I was just cooking for two. The only changes I made were: I added some taco seasoning to the tomato and bean mixture and for my husband's pizza I added some leftover taco meat that I had saved from making taco salads. We both loved it so I will be making this one again.

I noticed in the directions,that the refried beans were not mentioned.But I spread the bottoms of the pita's with the refried beans,and followed the rest as it was printed.Very easy & tasty!Thanks for a great recipe!
