1 tablespoon Parkay® Original Spread-tub
1 cup chopped yellow onion
1 cup hard cider
1 lb (16 oz) Velveeta®, cut into 1/2-inch cubes
1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
Blue corn tortilla chips and apple slices, optional

Melt Parkay in large skillet over medium heat; add onion and cook 5 to 7 minutes or until browned lightly, stirring occasionally. Add cider; simmer 3 to 5 minutes or until mixture is reduced slightly.
Add Velveeta and drained tomatoes. Cook 3 to 5 minutes or until Velveeta melts, stirring occasionally.
Serve with tortilla chips and apple slices, if desired.
