Creamy guacamole with diced, spicy tomatoes, green onion, a splash of lime juice and cilantro

INGREDIENTS

  • 2 large ripe avocados, pitted, peeled
  • 1 can (10 oz each) Ro*TelĀ® Mexican Diced Tomatoes with Lime Juice & Cilantro, drained
  • 1/4 cup finely chopped green onions
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon lime or lemon juice
  • 1/4 teaspoon garlic salt
  • Tortilla chips or cut-up vegetables, optional

DIRECTIONS

  1. Mash avocados in medium bowl to desired smoothness. Stir in drained tomatoes, onions, cilantro, lime juice and garlic salt.
  2. Serve with tortilla chips or vegetables, if desired.

This was easy and excellent. I didn't have onions or cilantro and it still tasted great!
