1 tablespoon vegetable oil
1 small yellow onion, chopped
2 medium carrots, thinly sliced
2 medium ribs celery, sliced
1 pkg (32 oz each) Gardein® Plant-Based Chick'n Broth
2 cups short cut pasta
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
1 tablespoon chopped fresh parsley

Heat oil in a large saucepan over medium heat. Add vegetables to pan and cook until starting to soften, 3 to 5 minutes, stirring occasionally.
Pour in broth; bring to a boil. Stir in pasta and cook until pasta and vegetables are tender 5 to 10 minutes, depending on which short cut pasta you choose.
Season soup with salt, pepper, and parsley and serve.
